Stuffed chine is a traditional dish of salt pork filled with parsley usually only found in Lincolnshire.The meat is deeply scored and lots of chopped parsley is stuffed into the cuts and the dish is simmered slowly. It is served sliced cold, sometimes with a sprinkling of vinegar with attractive contrasting stripes of pink and green.
